About Helliemae’s
Helliemae’s makes intense, complex confections in small batches. Ellen Daehnick started Helliemae’s in late 2010 because she couldn’t find the caramels she loved on the shelves: super dark, almost bitter caramels with plenty of flaky, crunchy sea salt. From the original Classic Salt Caramels, Helliemae’s products have grown to four year-round caramels and six seasonal caramels, along with three caramel sauces, a pecan crunch, and tart maraschino cherries. And just for the Horseshoe Market, Helliemae’s sells its much-coveted cold fresh banana pudding with salted caramel sauce.
All Helliemae’s products are made by hand in small batches, using the best ingredients, like organic, pastured butter and cream (and a ton of it). The treats are sold online at saltcaramels.com and by 50+ retailers in 10 states, including Colorado, California, Texas and New York.
Mother’s Day Specials & Father’s Day samples!
For Mother’s Day, we’ll have limited-edition Jasmine Caramels at Horseshoe, as well as fresh, creamy banana pudding with salted caramel sauce. In addition, we’ll have the early super-sneak preview of Atticus, our Father’s Day caramel that doesn’t return to the website until May 15. Made with CO whiskey, bourbon barrel-smoked sea salt, and small-batch cane syrup, it’s a hit with both moms and dads.
Ellen doesn’t have a culinary background. She just loves big flavors, good food, and small manufacturing. Before starting Helliemae’s, and after an MBA at Columbia University, she worked as consultant for McKinsey & Co and in tech at StorageTEK/Sun Microsystems. She lives in Denver with her husband, Chris, and their Giant Schnauzer, Allie.
